Some journeys begin with a destination.

Ray Baxter's began with a question.

What if the world's most remarkable foods were not the rarest, but simply the most overlooked?

For years, Ray followed forgotten mountain paths across Greece, not searching for luxury, but for authenticity. He met beekeepers whose hives rested among wild thyme. Shepherds who gathered mountain herbs by hand. Families whose olive trees had stood on the same rocky hillsides for generations.

What he discovered was not a trend.

It was a living tradition.

For thousands of years, Greece has been home to one of Europe's richest landscapes for aromatic herbs, wild botanicals and ancient olive groves. Intense sunlight, mineral-rich soils, sea breezes and rugged mountains create an environment where plants naturally develop exceptional aroma, character and complexity.

Many of these botanicals have long been valued in traditional Mediterranean culture not only for their remarkable flavor, but also for their role in daily wellness rituals that have been passed from one generation to the next.

The Odyssey Collection was created to share those discoveries.

Each Expedition is a carefully selected product that tells the story of a place, the people who care for it, and the landscape that shaped it.

This is not simply food.

It is Greece, thoughtfully curated for today's table.

"The mountain was silent except for the bells of grazing sheep. Inside the stone cellar, rows of graviera rested patiently,
changing a little every day. Some things cannot be rushed."

The Story Behind Expedition No. 002

Mount Olympus

Some mountains are climbed.

Others are remembered.

Mount Olympus has been both for more than three thousand years.

Long before it became the legendary home of the Greek gods, its rugged limestone slopes, intense sunlight and mountain winds created one of the Mediterranean's most remarkable habitats for wild aromatic herbs. Among them grows Greek oregano (Origanum vulgare ssp. hirtum), prized for generations for its powerful aroma, naturally high essential oil content and unmistakable character. Research has shown that geography, climate and growing conditions play a defining role in the composition of Greek oregano's essential oils.

Ray Baxter did not arrive looking for the world's most expensive oregano.

He was searching for something rarer.

Authenticity.

His journey led him beyond the villages and into the mountains, where local gatherers still harvest wild oregano by hand, waiting until the summer sun has concentrated its natural oils before carefully drying each branch in the traditional way.

What he found was not a forgotten ingredient.

It was a landscape still producing extraordinary flavor exactly as it has for centuries.

That discovery became Expedition No. 002.

Not simply a jar of oregano.

A place.
A tradition.
A mountain.
